NILLA WAFER CHEESECAKE CUPCAKES


Ingredients:

• 2 - 8 oz packages of cream cheese
• 1/2 cup + 2 tsp sugar
• 2 extra large or 3 medium eggs
• Nilla Wafers
• cherry pie filling (or diced strawberries)
• Cool Whip

1. beat cream cheese and eggs together for 5 minutes
2. place Nilla Wafer in the bottom of a cup
3. fill cup to just below the top with cream cheese mixture
4. bake at 350 for 12 minutes
5. let cool
6. dallop with cherry filling (or strawberries) and cool whip
